Why does organic matter? Take, for example, what the nutritional value looks like from conventional soil management v organic. This is only the beginning of what happens with food and ingredients. Imagine how much more is lost with processing and the addition of chemicals, many of which are known to be harmful to our bodies. Food is no longer the same as when our grandparents (or for you younger folks, your great grandparents) bought from their local grocers or farmers (or even grew much of their own). Today, most of the middle aisles in the store are filled with "food like products" and nothing that helps our bodies nutritionally, and in many instances, hurts us much more than most are aware.
